Have your cake and eat it too! Especially when it's low carb, low calorie, and high in protein. Mom and I have been playing with recipes to go along with our low carb (not NO carb) diet (Something we've adapted off of Medifast). And it donned on me that I can proudly say I ate my cooked carrots. I wont get in the discussion of how I believe they should be crunchy not soft.. that is for another blog! So jump in you kitchen and try this wonderful treat! I even got my hubby to eat it. Better yet, he even said it was good!
1 Cup Oat Flour (Grab that oatmeal out of the pantry and give it a good whirl in you blender if
you don't have oat flour, that's what I did!)
2 Scoops Vanilla Whey (I used Body Fortress Whey Protein in Vanilla)
2 tsp Cinnamon
1/2 tsp Baking Soda
1/4 tsp Salt
1/8 tsp Allspice
1/8 tsp Nutmeg
2 Eggs
1 egg white
1/2 Cup Stevia in the Raw (Original said 3/4 cup, I found that too sweet)
8oz Baby Food Carrots (you can also puree your own carrots)
4oz Water (Recipe calls for Water, I only used 2 oz)
Ready to pop into the oven!
Feel free to lick out the batter bowl.. I haven't tried it that way just yet, I
haven't found the section in myfitnesspal.com to track it . ;0) But it smells HEAVENLY!
-Preheat oven to 350 degrees.
-Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
-Mix egg whites, stevia, baby food carrots and water in a bowl.
-Add wet ingredients to dry ingredients and mix together.
-Spray 8x8 glass dish with non-stick spray.
-Pour ingredients into dish.
-Bake 20-30 minutes. (mine came out at 22 minutes)
-Cut into 8 bars. Enjoy!
110 Calories, 11 Carbs, 3 g fat, 10 g of protein.
The house smells SO good!
