Here we are at the end of February. It has been such a busy month! Billy Bob headed back to Alaska February 6th, sad to see him go but I knew I'd be joining him soon. Since then Mom and I have been making all sorts of fun projects from Pinterest! I haven't taken pictures of our Infinity dresses yet.. I know. I am a total slacker. But, I have taken pictures of things here and there!

We finally put to use our fun little decorating tips for frosting and decorating and made some really adorable cupcakes for Valentines day! (If you own these.. use them! If you don't.. go buy some) We had so much fun decorating them, we wished be had doubled the batch but then figured we would have to find a way to get rid of them all. So I guess it isn't a bad thing we just made one batch. It was so much fun! If you've always wanted pretty cupcakes, this was the way to go!


Next, and I just have to add this. If you have been eating what you thought was french toast your entire life, you are sadly mistaken. So I am going to share the family secret. Here is what our family has grown up eating. This yummy, fluffy, heavy, delicious french toast. I assure you, your family will look at you a little odd the first time, but after that it is game over. You HAVE to try this! Mom always made this recipe for us, so we never quite understood what french toast was served at restaurants, it didn't look or taste like Mom's! Recipe 






Finally nearing the end of February my beautiful little boy turned a year old. It still almost (I am not a real big cryer..) chokes me up. It is so sad to think it has gone so fast but it is completely worth it. I can't say enough about how much I have enjoyed the last year with him. He is such a happy, amazing little boy. Billy Bob and I are so blessed.

Happy 1st Birthday Wee Man!


So, for his birthday I hopped on Pinterest and found a REALLY fun birthday cake I had in mind from tablespoon.com and took the short cut with a box cake. It was so pretty! And of course him and everyone else were impressed. And Mom and I had to restrain ourselves from eating it for breakfast.. don't bake it a day early. You will stare at it all day and just want to cut a slice out!  Here is the Recipe

We have had such a wonderful time staying with Mom and Dad this winter. I know we are all sad yet excited to be going back to Alaska. Billy Bob has been busy. We are now in the process of buying a house! Exciting! So March 1st Landrum and I will have our bags packed and headed back up. North to Alaska! Starting a new adventure. We will be taking so many new memories up with us. And will miss our family and friends here so much. Everyone has made our stay amazing and memorable. But before I go, a picture of our hopefully soon to be house!

Have your cake and eat it too! Especially when it's low carb, low calorie, and high in protein. Mom and I have been playing with recipes to go along with our low carb (not NO carb) diet (Something we've adapted off of Medifast). And it donned on me that I can proudly say I ate my cooked carrots. I wont get in the discussion of how I believe they should be crunchy not soft.. that is for another blog! So jump in you kitchen and try this wonderful treat! I even got my hubby to eat it. Better yet, he even said it was good!



1 Cup Oat Flour (Grab that oatmeal out of the pantry and give it a good whirl in you blender if
                           you don't have oat flour, that's what I did!)



 2 Scoops Vanilla Whey (I used Body Fortress Whey Protein in Vanilla)

 2 tsp Cinnamon
1/2 tsp Baking Soda
1/4 tsp Salt
1/8 tsp Allspice
1/8 tsp Nutmeg
2 Eggs
1 egg white
1/2 Cup Stevia in the Raw  (Original said 3/4 cup, I found that too sweet)
8oz Baby Food Carrots (you can also puree your own carrots)
4oz Water (Recipe calls for Water, I only used 2 oz)

Ready to pop into the oven!
 Feel free to lick out the batter bowl.. I haven't tried it that way just yet, I 
haven't found the section in myfitnesspal.com to track it . ;0) But it smells HEAVENLY!


-Preheat oven to 350 degrees.
-Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
-Mix egg whites, stevia, baby food carrots and water in a bowl.
-Add wet ingredients to dry ingredients and mix together.
-Spray 8x8 glass dish with non-stick spray.
-Pour ingredients into dish.
-Bake 20-30 minutes. (mine came out at 22 minutes)
-Cut into 8 bars. Enjoy!


110 Calories, 11 Carbs, 3 g fat, 10 g of protein.

The house smells SO good!

Monday, January 3rd, 2012. 

Adventure. Wikipedia states "An adventure is defined as an exciting or unusual experience; it may also be a bold, usually risky undertaking, with an uncertain outcome." I think I can clearly say, my life in the last year and a half, has been an adventure. You see that hansom man up there, grinning from ear to ear? He changed it all. We dated in high-school. Ah, yes. The days of young and dumb. I gave him that awful line, let's be friends. But it wasn't over yet. He is one persistent man. He came waltzing (okay.. maybe not waltzing.. I would have to stay strutting) back into my life several years later and didn't let several dozen un-answered phone calls slow him down. Little did I know that after I answered one, he wasn't going to let me go. 


At the time, it didn't seem like we were moving that quickly, rather, more at a leisurely pace. We joked about taking baby steps, dated awhile, got a shared phone plan, a puppy. Then he popped the question and of course I said yes. And ever since then, time has been speeding by, that leisurely pace disappeared. Three days after my wedding dress arrived an even bigger gift arrived, in the form of a + + +. That would be three positive pregnancy tests. We arrived at the conclusion we were going to move back to Alaska where he could go back to work for his old job, as the economy has yet to pick up again. And I could be a stay at home mom to the most adorable little baby. So we planned our wedding and said I do, on one of the best days of our lives.





The next best day of our lives arrived on February 24th. Landrum. I never knew someone could steal your heart so quick, well.. his father was pretty quick too. 





 And so, with our new born in our arms, our U-Haul packed up, tearful goodbyes said, we started our Adventure. North To Alaska! Where the daylight remains through summer, leaves for the winter and is some of the most breathtaking scenery you could imagine. 


And of course now that I have you caught up on everything, I'll have the chance to blog our daily adventures! Keep your eyes open and your web browser on, cause life just keeps getting better and bigger every day!
